Pepper Steak with Potatoes



This is one of my favorite dinners paired with a side green salad and my recipe for Mayonnaise Chocolate Cake.

5 medium red potatoes, cut into 1/4 inch slices
1/2 c. water
1 lb. boneless beef sirloin steak, thinly sliced
1 garlic clove, minced
2 tbsp. olive oil
1 medium green pepper, julienned
1 small onion, chopped
pepper to taste
4 tsp cornstarch
1 c. beef broth

*Place potatoes and water in microwave safe bowl; cover and microwave on high for 8-10 minutes or until tender. Meanwhile, in a skillet, saute beef and garlic in oil until meat is no longer pink. Remove and keep warm; drain drippings. In the same skillet, saute green pepper and onion until crisp and tender. Return beef to the pan. Add potatoes and pepper; heat through.

In a small saucepan, combine cornstarch and broth until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Drizzle over meat mixture; toss to coat.

Hey Kristin, I came across your site tonight and so many of your recipes look so yummy! A few of the must tries are the Pepper steak with potatoes, sweet n sour chicken and Donna's sloppy Joe's (which I am making tonight because they sounded so yummy and I had the hamburger even thawed for tonight)
I can't wait to try out some more recipes!
